Father's Day

I have 3 great fathers in my life. My dad. My father in law. My husband. They are all great examples of good fathers and they all play an important role in my life. I feel very blessed!

It was Daniel's first Father's day and I can tell you that he is one awesome dad. Lucy is so lucky to have him as her dad. He loves to play with her and gets so excited to see her all the time. He is the only one that make her smile real big! I love watching them interact.

Fishin'

For Memorial Day we took it easy and went fishing at Salem Pond. It was a beautiful day. Dan was so stoked to get some fishing gear and to go out and get some fish. My excited husband quickly grew impatient after an hour or so of catching nothing. And little Lucy was a little moody the whole time. Sooo it made for a not so lucky dat at the pond. But we will be back!











Homemade Strawberry Jam








Strawberry Freezer Jam

the ingredients:


3-1/4  prepared fruit


1/4
fresh lemon juice

1
MCP Pectin

1
light corn syrup

4-1/2
sugar

how to make it:


CUT strawberries to be small enough to fit in food processor. Process. Measure exactly 3-1/4 cups prepared fruit into large bowl. Stir in lemon juice.

STIR pectin into prepared fruit in bowl. Let stand 30 min., stirring every 5 min. Stir in corn syrup. Gradually add sugar, stirring until well blended. Stir an additional 3 min. or until sugar is completely dissolved and no longer grainy. (A few sugar crystals may remain.)
FILL all containers immediately to within 1/2 inch of tops. Let stand at room temperature 24 hours. Jam is now ready to use. Store in refrigerator up to 3 weeks or freeze extra containers up to 1 year. Thaw in refrigerator before using.

EAT on toast with butter. Mmmm!

5K

At the end of the school year, Dan's school Diamond Fork always does a 5K run for Fitness Day. This year Lucy and I came to run with Dan. My first 5k! I was proud of us for finishing it. And it actually wasn't too bad. I really loved being cheered on by the elementary school as we passed and then at the finish line. I may just have to do another one!






Mother's Day

Happy Mother's Day! 
(even though I'm posting on Fathers Day)

I'm so grateful to have great examples of good mothers. 

My sweet mother in law is the most selfless woman. She is always seeking to help those in need. She is a great example of charity.

And my sweet mom has taught me so much and is still teaching me things daily. She is so giving and so kind to everyone. She is an amazing role model to me. I'm glad I have her to look up to. 

And they are both awesome grandmas to Lucy!

And I feel very fortunate to be a new mom to my sweet girl. I love every minute of it!
